Head chef
Sean runs the kitchen.
Local produce, cooked without fuss, plated with intent. Sean has built his reputation on a simple conviction: that the best Irish ingredients, treated with care and skill, need nothing else.
He deals with the boats at Greencastle and the producers across Inishowen himself, which is why the menu moves through the week rather than sitting still.

We are a small team in a small town, which means everyone here does more than one job and everyone gets a say in how the place runs. Sean trains from the ground up, so experience matters less than attitude and a willingness to learn.
